Honey Butter

Every Christmas morning, and other times during the year when my kids are especially good, I make honey butter as a treat. It goes equally well with scones or cornbread.

Ingredients

• 1 cup butter room temperature
• 1 cup honey smooth
• 1 1/4 cups powdered sugar
• 1 tsp vanilla the kind with little beans works beautifully
• 3 Tbsp pasteurized egg whites

Instructions

1. Combine ingredients in one bowl (if you have a stand mixer, use that bowl).
2. Mix on low speed until combined, and then increase speed to medium high and beat for 10 minutes.
3. Use immediately; refrigerate any leftovers.
