Activate Starter
  1. Mix water, flour, and dried sourdough in a wide mouth canning jar.
  2. Place in a proofing box for 24 hours at 85-90 degrees.
  3. Follow maintenance instructions at least 3 days before using.
Maintain Starter
  1. Mix equal parts water, flour, and starter in a clean canning jar.
  2. Discard old starter unless you are cooking with it.
  3. Repeat daily (or as frequently as 6-8 hours if you use it more).
